Freeze-dried chocolate retains its original flavor but takes on a lighter, crunchier texture that melts in your mouth faster than regular chocolate.

Freeze-dried chocolate isn’t necessarily healthier. It contains slightly less calories than traditional chocolate, but keeps the same nutritional profile. 

To freeze-dry chocolate, it’s placed in a freeze dryer that freezes it at extremely low temperatures before removing the moisture through sublimation, leaving a crisp, moisture-free product.
